White Lasagna Soup

A comforting and creamy white lasagna soup with turkey bacon that will warm your soul.

Ingredients

  • 1 tablespoon olive oil
  • 4 ounces turkey bacon, chopped
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 2 cups kale, chopped
  • 8 ounces lasagna noodles, broken into pieces
  • 1 teaspoon Italian seasoning
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1/4 cup grated Parmesan cheese

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the turkey bacon and cook until crispy.
  2. Add the onion and garlic, and sauté until softened.
  3. Pour in the chicken broth and bring to a boil.
  4. Stir in the heavy cream, kale, and broken lasagna noodles.
  5. Add Italian seasoning and cook for 10-12 minutes, until noodles are tender.
  6. Remove from heat and stir in the ricotta, mozzarella, and Parmesan cheeses until melted and combined.
  7. Serve warm and enjoy!

Notes

  • For added flavor, use homemade chicken broth.
  • Feel free to add more vegetables such as mushrooms or spinach.
