- 1 tablespoon olive oil
- 4 ounces turkey bacon, chopped
- 1 medium onion, diced
- 2 cloves garlic, minced
- 3 cups chicken broth
- 1 cup heavy cream
- 2 cups kale, chopped
- 8 ounces lasagna noodles, broken into pieces
- 1 teaspoon Italian seasoning
- 1 cup ricotta cheese
- 1 cup mozzarella cheese, shredded
- 1/4 cup grated Parmesan cheese
- In a large pot, heat olive oil over medium heat. Add the turkey bacon and cook until crispy.
- Add the onion and garlic, and sauté until softened.
- Pour in the chicken broth and bring to a boil.
- Stir in the heavy cream, kale, and broken lasagna noodles.
- Add Italian seasoning and cook for 10-12 minutes, until noodles are tender.
- Remove from heat and stir in the ricotta, mozzarella, and Parmesan cheeses until melted and combined.
