- 2 pounds beef chuck, cut into 1-inch cubes
- 4 cups beef broth
- 4 medium carrots, sliced
- 3 potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons Worcestershire sauce
- In a large skillet, brown the beef cubes on all sides.
- Transfer the beef to the crockpot.
- Add all remaining ingredients to the crockpot.
- Stir gently to combine.
- Cover and cook on low for 8 hours or high for 4 hours.
- Season with additional salt and pepper to taste before serving.
Notes
- For a thicker stew, mix 2 tablespoons of cornstarch with equal parts cold water and stir into the stew during the last hour of cooking.
